Ingredients

  • 12 oz milk or dark chocolate
  • 1 tablespoon coconut oil
  • 1 cup soft baking caramels (melted)
  • 1 medium green apple (chopped or thinly sliced)
  • 1 cup chopped gluten-free pretzels or nuts (pecans, walnuts, or almonds)
  • 1/4 cup melted chocolate for drizzle

Equipment

  • Double boiler or microwave
  • spatula
  • Parchment Paper
  • Knife
  • 9x13-inch pan

Method

  1. Combine 1 cup of water with 2 tablespoons of lemon juice. Soak your apple pieces in this mixture for 5-10 minutes to prevent browning, ensuring freshness in every bite.
  2. Using a double boiler or microwave, melt the chopped chocolate and coconut oil until smooth. If using a microwave, heat in 30-second intervals, stirring to avoid burning.
  3. Line a 9x13-inch pan with parchment paper. Pour the melted chocolate onto the paper, using a spatula to spread it into an even layer about 1/4 inch thick.
  4. Sprinkle the crushed pretzels over the melted chocolate, followed by the diced apples. Drizzle melted caramel on top, and finish with a drizzle of melted chocolate.
  5. Refrigerate for 1-2 hours until the chocolate is firm. For a quicker set, place in the freezer for the last 20 minutes.
  6. Once hardened, simply break into rustic, bite-sized pieces. Alternatively, use a knife for more uniform squares.
  7. Store any leftover bark in an airtight container in the refrigerator and enjoy within 24 hours for the best texture.

Notes

Apples Matter: Opt for Granny Smith for a nice tart balance. Prevent Browning: Soak your apples in a lemon-water solution to keep them crisp and fresh. Cutting Technique: For clean breaks or cuts, ensure the bark is fully set. A sharp knife works best for this.
