Ingredients

For the Base
  • 2 cups gluten free flour Bob's Red Mill 1-to-1 recommended
  • 3 tbsp sugar
  • 1 tbsp baking powder
  • 1 tsp sea salt
For the Wet Mixture
  • 1.25 cups whole milk add up to 1/4 cup more if needed
  • 3 tbsp canola oil or melted coconut oil
  • 2 large eggs at room temperature
  • 1 tbsp vanilla extract
Optional Additions for Flavor
  • 1 pinch cinnamon for warmth
  • 1 handful chocolate chips or fresh blueberries for mix-ins

Method

  1. Preheat your waffle maker until fully hot. This ensures a golden crust and prevents sticking.
  2. In a large bowl, whisk together the gluten free flour, sugar, baking powder, and salt until well combined.
  3. In a separate jug or bowl, mix the milk, oil, vanilla extract, and eggs. Whisk until smooth and slightly frothy.
  4. Pour the wet mixture into the dry ingredients. Stir gently with a spatula until just combined. Do not overmix. Add a splash of milk if batter is too thick.
  5. Lightly grease the waffle maker with oil or cooking spray.
  6. Pour ¼ to ½ cup of batter into the hot waffle maker. Spread if needed, close the lid, and cook until golden brown according to your waffle maker's indicator.
  7. Serve immediately with desired toppings or keep warm in the oven while cooking the rest.
