What Makes Biscoff Cookies So Special?

Have you ever wondered what makes those delightful Biscoff cookies so uniquely delicious? They’re a true taste sensation! The magic comes from their distinct caramelized, spiced flavor, reminiscent of warm gingerbread but with its own special zing. This delightful taste comes from a secret blend of spices, which gives them their characteristic warmth. If you love that caramelized crunch, you’ll also enjoy my Praline Crunch sweet-and-salty treat.

Originally, these cookies were known as Speculoos in Belgium, where they have a long and proud tradition. The name “Biscoff” is actually a playful portmanteau of “biscuit” and “coffee,” as they were traditionally enjoyed as a perfect companion to a hot cup of coffee. They offer a wonderful balance of a slightly crisp exterior that gives way to a delightfully chewy, tender interior.

  • 2 3/4 cups all-purpose flour scooped and leveled (387g)

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

  • measuring cups and spoons
  • 1/4 cup cookie scoop

Method

  1. Preheat oven to 375°F. Line two baking sheets with parchment paper or silicon baking mats.
  2. In a food processor or blend, pulse 16 of the Biscoff cookies until you have about 1 cup of fine crumbs. Set aside. Roughly break up another 8 Biscoff cookies into chunks and set aside. Reserve the 8 remaining Biscoff cookies for decorating the tops of the cookies at the end.
  3. In a large bowl, cream the butter, brown sugar, and granulated sugar for 3-4 minutes.
  4. Add the eggs and vanilla, then beat again, stopping to scrape the bottom and sides of the bowl.
  5. Add the cookie butter and mix until combined.
  6. Add the flour, reserved 1 cup of finely crushed Biscoff cookie crumbs, cornstarch, baking soda, baking powder, and salt. Mix on medium-low speed just until combined, stopping to scrape the bottom and sides of the bowl.
  7. Stir in the reserved broken up Biscoff cookies and white chocolate chips.
  8. Use a large 1/4 cup cookie scoop to make evenly sized balls of cookie dough. Roll them gently between your hands for perfectly uniform cookies, if desired. Space the cookies a few inches apart on the parchment paper-lined baking sheets so they have room to spread while baking. (See notes if you want to stuff the cookies with additional cookie butter.)
  9. Bake for 8-10 minutes just until set but slightly underbaked in the middle so they stay soft.
  10. Remove from the oven and press half of one of the reserved Biscoff cookies into the top of each cookie along with a few additional white chocolate chips. Let cool on the baking sheets for 10 minutes before transferring to a wire rack to finish cooling.

Biscoff Cookies Recipe: Ingredient Deep Dive

Let’s talk about what makes this biscoff cookies recipe so special! The star, of course, is Biscoff cookie butter. It’s not just a spread; it’s the heart and soul of these cookies, infusing them with that unmistakable caramelized spice flavor.

We’re also leaning on brown sugar – both light and packed! Brown sugar brings more than just sweetness; its molasses content adds a wonderful moisture and chewiness that’s crucial for that perfect cookie texture. It helps prevent them from becoming too crisp. You’ll taste that same brown-sugar chew in my chewy peanut butter cookies.

And then there’s cornstarch. This little powerhouse ingredient might seem unassuming, but it plays a vital role in creating a tender cookie. It helps to break down gluten strands in the flour, resulting in a softer, more delicate crumb that melts in your mouth.

Essential Tools for Your Biscoff Cookies Recipe

To whip up these delightful biscoff cookies recipe delights, you’ll want to have these handy kitchen staples ready:

  • Food processor or blender
  • Large mixing bowls
  • Electric mixer (handheld or stand mixer)
  • Measuring cups and spoons
  • 1/4 cup cookie scoop
  • Baking sheets
  • Parchment paper or silicone baking mats
  • Wire cooling rack

How to Make Biscoff Cookies: Step-by-Step

Get ready to bake some pure happiness with this fantastic biscoff cookies recipe!

  1. Prep Your Oven and Cookies: First things first, preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone baking mats – this ensures your cookies bake evenly and don’t stick.
  2. Create Biscoff Crumbs: Grab 16 of your Biscoff cookies and pulse them in a food processor until you have about 1 cup of fine crumbs. Set these aside. Then, roughly break up another 8 Biscoff cookies into chunky pieces, and set those aside too. Reserve the final 8 Biscoff cookies – these are for decorating the tops later!
  3. Cream the Base: In a large bowl, cream together the cold, cubed butter, packed light brown sugar, and granulated sugar. Beat them with your mixer for about 3 to 4 minutes until the mixture is light, fluffy, and beautifully combined.
  4. Add Wet Ingredients: Now, beat in the 2 large eggs, one at a time, making sure to scrape down the sides and bottom of the bowl after each addition. Pour in the 2 teaspoons of vanilla extract and beat again until just incorporated.
  5. Incorporate Cookie Butter: Add the 1 cup of Biscoff cookie butter to the creamed mixture. Mix on medium speed until everything is smooth and well combined.
  6. Mix Dry Ingredients: In a separate bowl, whisk together the 2 3/4 cups of all-purpose flour, 2 teaspoons of cornstarch, 1 teaspoon of baking soda, 1/2 teaspoon of baking powder, and 1/2 teaspoon of salt. Gradually add this dry mixture to the wet ingredients in your large bowl. Mix on medium-low speed just until combined. Be careful not to overmix at this stage – a few streaks of flour are okay, as we’ll be stirring in the chunky bits next. Scrape the bowl as needed.
  7. Stir in Goodies: Gently fold in the reserved chunky Biscoff cookie pieces and the 1 1/2 cups of white chocolate chips. If you want those delightful pockets of extra cookie butter in the center, now’s the time! Take a heaping tablespoon of cookie dough, flatten it slightly, place about a teaspoon of cookie butter in the center, and then carefully wrap the dough around it, forming a smooth ball.
  8. Scoop and Shape: Use a large 1/4 cup cookie scoop to portion out your dough. For perfectly uniform cookies, gently roll each scoop between your palms. Place the dough balls a few inches apart on your prepared baking sheets, giving them plenty of room to spread as they bake.
  9. Bake to Perfection: Bake the cookies for 8 to 10 minutes. You’re looking for them to be just set around the edges but still slightly underbaked and soft in the center. This is key to achieving that wonderfully chewy texture!
  10. Decorate and Cool: As soon as the cookies come out of the oven, gently press half of a reserved Biscoff cookie into the top of each warm cookie. Add a few extra white chocolate chips, too, if you like! Let the cookies cool on the baking sheets for about 10 minutes. This allows them to firm up just enough before you carefully transfer them to a wire rack to cool completely.

Tips for Perfect Biscoff Cookies Every Time

Making amazing biscoff cookies recipe treats is all about a few simple tricks and understanding how they bake. Here are my best tips to help you achieve cookie perfection!

  • Cookie Spread Control: If your cookies tend to spread too much, ensure your butter isn’t too soft when you begin creaming. If they don’t spread enough, your oven might be running a bit hot, or your butter might have been too cold. For very flat cookies, try chilling the dough for about 15-30 minutes before baking.
  • The Chewy Secret: The absolute key to soft, chewy centers is not overbaking. Pull them out when the edges look set but the middle still appears a little soft and underdone. They’ll continue to bake on the hot baking sheet as they cool.
  • Oven Temperature Matters: Ovens can be finicky! I always recommend using an oven thermometer to ensure your oven is accurately calibrated. If your cookies consistently bake too fast or too slow, you may need to adjust your baking time slightly. Start checking around the 7-minute mark.
  • Flavor Variations: Feel free to swap out the white chocolate chips for milk chocolate, dark chocolate, or even butterscotch chips! Chopped pecans or walnuts would also be a delicious addition.

The star of our biscoff cookies recipe is definitely the cookie butter, but let’s explore your options!

TypeDescriptionEffect on Cookies
Creamy BiscoffSmooth and silky, just like peanut butter. Will create a smoother cookie dough texture and a more uniform distribution of flavor.
Crunchy BiscoffContains small, crunchy cookie pieces within the spread. Will add little delightful textural surprises throughout the cookie, similar to the chunky cookie pieces.
Other Speculoos SpreadsBrands like Trader Joe’s or European brands offer similar spiced cookie spreads.Flavor profiles can vary slightly. Some may be sweeter or have a different spice blend.

When choosing your cookie butter, both creamy and crunchy work beautifully. Creamy will give you a smoother dough, while crunchy adds delightful little textural surprises. If you can’t find Biscoff cookie butter, other speculoos spreads are a good substitute, but be aware that the flavor profile might differ slightly depending on the brand’s spice blend. Creating delicious gluten-free and vegan versions of this biscoff cookies recipe is totally achievable! I love making these adaptable so everyone can enjoy them.

For Gluten-Free Biscoff Cookies:

  • Flour: Replace the 2 3/4 cups of all-purpose flour with a good quality 1:1 gluten-free baking flour blend that contains xanthan gum. Brands like Bob’s Red Mill 1-to-1 Baking Flour or King Arthur Gluten-Free Measure for Measure Flour work wonderfully.
  • Cornstarch: You can keep the cornstarch as is, or if your GF blend already contains starches, you might slightly reduce it.
  • Cookies: Ensure your Biscoff cookies used for crushing and chunking are gluten-free if you are strictly avoiding gluten. Many traditional Biscoff cookies are not gluten-free. You might need to find a GF speculoos-style cookie.

For Vegan Biscoff Cookies:

  • Butter: Substitute the 1 cup of cold, cubed salted butter with 1 cup of vegan butter sticks. Look for brands that have a similar fat content to dairy butter for the best results in creaming and texture.
  • Eggs: Replace the 2 large eggs with a vegan egg substitute. A popular and effective option is using flax eggs: whisk together 2 tablespoons of ground flaxseed with 6 tablespoons of water and let it sit for 5-10 minutes until thickened. Alternatively, commercial egg replacers designed for baking can also be used.
  • White Chocolate Chips: Ensure you use vegan white chocolate chips. Many brands are available now that are dairy-free.
  • Cookies: Just like with gluten-free, if you need strict vegan, ensure your Biscoff cookies and any added chocolate chips are certified vegan.

These adaptations allow you to enjoy the wonderful spiced flavor of these cookies, no matter your dietary needs!

Storing and Freezing Your Biscoff Cookies

Keeping these delightful biscoff cookies recipe treats fresh is simple! Store cooled, baked cookies in an airtight container at room temperature for up to 3-4 days. Adding a slice of bread to the container can help maintain their soft texture.

Freezing Options:

  • Cookie Dough: You can absolutely freeze the cookie dough! Scoop the dough balls onto a parchment-lined baking sheet, freeze until firm, then transfer to a freezer-safe bag or container for up to 3 months. Bake directly from frozen, adding a minute or two to the baking time.
  • Baked Cookies: For baked cookies, ensure they are completely cooled. Wrap them tightly in plastic wrap, then place them in a freezer-safe bag or container. They’ll keep well for up to 2 months. Thaw at room temperature.

Frequently Asked Questions About Biscoff Cookies

Here are answers to some common questions about these yummy biscoff cookies recipe delights!

  • What exactly are Biscoff cookies and what is their origin? Biscoff cookies are Belgian cookies known for their unique caramelized and spiced flavor. The name comes from “biscuit” and “coffee,” as they were traditionally paired with coffee. They are made with a special blend of spices.
  • Are Biscoff cookies and gingerbread the same? No, they are not the same, though they share a similar warm spice profile. Biscoff cookies have a distinct caramelized sugar flavor and a lighter spice blend compared to the stronger ginger and molasses notes typically found in gingerbread.
  • Troubleshooting common issues like cookies spreading too much or being too hard? For too much spread, ensure your butter is cold and not softened. For cookies that are too hard, you are likely overbaking them; pull them out when the centers still look soft.
  • Can I make these cookies smaller or larger? Yes! You can use a smaller scoop for mini cookies (reducing bake time) or a larger scoop for giant cookies (increasing bake time). Ensure they are evenly sized for consistent baking.

Whipping up this biscoff cookies recipe is truly a labor of love that brings immense joy. The aroma filling your kitchen and the delightful spiced flavor are simply unmatched. I’m so thrilled that you can bring this cozy, comforting treat into your home with ease.
