Ingredients

  • 1 package firm or extra-firm tofu 14-ounce
  • 2 cups green beans roughly chopped
  • 1 cup diced carrots or red pepper
  • 2 Tbsp toasted sesame oil for sautéing (or sub peanut or coconut)
  • 1/4 cup low-sodium soy sauce (ensure gluten-free for GF eaters)
  • 1 Tbsp fresh grated ginger
  • 2 Tbsp organic brown sugar (reduce slightly for less sweet sauce)
  • 1 Tbsp agave or maple syrup (or honey if not vegan // reduce slightly for less sweet sauce)
  • 1 Tbsp cornstarch
  • Brown rice
  • Peanut sauce

Equipment

  • Large Skillet
  • wok
  • spatula
  • sharp chef’s knife
  • Cutting Board
  • Small mixing bowl
  • Measuring cups
  • Measuring spoons
  • baking sheet

Method

  1. Preheat oven to 400 degrees F (204 C) and begin drying your tofu. Drain, remove it from the package and place between two thick towels folded into the shape of the tofu. Then place a plate or bowl on top and top it with something heavy like a book or skillet. Alternatively, use a tofu press.
  2. Let it dry for about 15 minutes, changing your towels if they get too wet. Once dry, unwrap, chop tofu into roughly 1-inch cubes or rectangles.
  3. Arrange tofu on a lightly greased or parchment-lined baking sheet to prevent sticking and bake for a total of 25-35 minutes, flipping once halfway through to ensure even cooking. This will dry out the tofu and help give it a more meat-like texture. If you want a tougher texture, cook it for 30-35. For a slightly more tender texture, pull it out at 20-25 minutes to check.
  4. Once it’s golden brown and a bit tough and firm, remove from the oven set it out to dry a bit more while you prep your vegetables. Ideally, it would set out another 45 minutes or even longer.
  5. If serving over rice, start the rice at this point.
  6. In a small mixing bowl, whisk together all of the sauce ingredients – set aside.
  7. To a large skillet over medium-high heat, add sesame oil and swirl to coat. Then add veggies and toss to coat. Cook for 5-7 minutes, stirring often. When the vegetables have some color and have softened a bit, add the sauce and stir. It should bubble and thicken. Then add the tofu and stir to coat.
  8. Cook the mixture for 3-5 minutes, stirring often. When veggies are cooked to your preferred doneness, remove from heat. Serve as is or over rice for a more filling meal. Best when eaten fresh, though will keep in the refrigerator for a couple days.

Customizing Your Tofu Stir Fry Vegetables

The beauty of a Tofu Stir Fry lies in its versatility, especially when it comes to vegetables. You can truly make it your own by choosing veggies that complement each other in flavor, color, and texture. Always aim for uniform cuts so everything cooks evenly. For tougher vegetables, you might want to pre-blanch them or add them to the pan first.

VegetablePrep/Cook Notes
BroccoliCut into small florets. Can blanch for 2-3 minutes before stir-frying for tenderness.
CarrotsSlice thinly on the bias or julienne. Add with tougher veggies as they take longer to soften.
Bell PeppersCut into 1-inch pieces. Add halfway through cooking as they soften quickly.
Snap PeasTrim ends. Add towards the end of cooking to maintain crunch.
MushroomsSlice. Add early to allow them to release moisture and brown.
Bok ChoySeparate leaves, chop whites and greens separately. Add whites first, then greens at the very end.
Zucchini/SquashSlice into half-moons or sticks. Add towards the end to prevent them from becoming too soft.
Water ChestnutsCanned, sliced. Add at the very end for a lovely, crisp texture.
Baby CornCanned, whole. Add at the very end for crunch and sweetness.
Edamame (shelled)Frozen, shelled. Add directly to the pan towards the end, no need to thaw.

Stir-Frying Without a Wok: Master Your Skillet

Don’t have a wok? No problem! You can still create an amazing Tofu Stir Fry using a standard skillet. The key is understanding how to adapt your technique to ensure successful results. These high-heat tips also apply to noodle stir-fries like our Quick Vegetable Lo Mein.

  1. Use a Large, Heavy-Bottomed Skillet: A cast iron or heavy stainless steel skillet retains heat well, which is crucial for stir-frying. Ensure it’s as large as possible to maximize the cooking surface.
  2. High Heat is Essential: Preheat your skillet over medium-high to high heat until it’s shimmering. This high temperature sears the ingredients quickly, preventing them from steaming.
  3. Don’t Overcrowd the Pan: This is the most important tip. Overcrowding lowers the pan’s temperature and causes ingredients to steam instead of stir-fry. Cook vegetables in batches if necessary, removing them from the pan once cooked and adding them back in at the end with the sauce.
  4. Manage Moisture: When stir-frying, moisture is the enemy of crispiness. Ensure your vegetables are dry before adding them. If you notice too much liquid accumulating, remove some of it with a spoon or increase the heat briefly.
  5. Use Enough Oil: A tablespoon or two of a high smoke point oil (like sesame, peanut, or avocado oil) is necessary to lubricate the pan and help conduct heat, ensuring even cooking and preventing sticking.
  6. Keep Stirring: Just like with a wok, constant motion is important. Toss and stir your ingredients frequently to ensure even cooking and browning.

By following these simple adjustments, your skillet can deliver a fantastic Tofu Stir Fry with delightful textures and flavors.

Common Tofu Stir Fry Mistakes & How to Fix Them

Even seasoned cooks can stumble with a Tofu Stir Fry. Knowing the common pitfalls and how to correct them will make you a stir-fry master.

Soggy Tofu

The most common complaint! This happens from insufficient pressing, not baking or cooking long enough, or overcrowding the pan. Fix: Press your tofu thoroughly (at least 15 minutes, ideally longer). Bake until truly golden and firm. When stir-frying, cook tofu in batches if your pan isn’t large enough. Ensure your pan is very hot before adding the tofu.

Bland Sauce

A flavorless sauce can ruin the whole meal. This often comes from not tasting and adjusting. Fix: Taste your sauce before adding it to the pan! Adjust seasonings as needed—add more soy sauce for saltiness, sugar or syrup for sweetness, ginger for zing, or a dash of vinegar for brightness. Don’t be afraid to experiment to find your perfect balance.

Overcooked/Undercooked Vegetables

Mushy or raw veggies are no fun. This is usually due to inconsistent chopping or incorrect cooking order. Fix: Chop all vegetables to roughly the same size to ensure even cooking. Add tougher vegetables (like carrots or broccoli) first, allowing them a few minutes to soften before adding quicker-cooking ones (like bell peppers or snap peas).

Stir Fry Sticking to the Pan

This leads to burnt bits and a messy cleanup. It’s often related to not enough oil, incorrect heat, or an unseasoned pan. Fix: Use a sufficient amount of oil (1-2 tablespoons) and ensure your pan is adequately preheated to a medium-high or high temperature before adding ingredients. For cast iron, ensure it’s well-seasoned. Don’t overcrowd the pan, as this can lower the temperature and cause sticking.

Meal Prep & Storage Tips for Your Tofu Stir Fry

One of the best things about a Tofu Stir Fry is how well it adapts to meal prepping. A little foresight can save you tons of time during busy weeknights.

  • Prep Components Ahead: You can press and cube your tofu up to 2 days in advance, storing it in an airtight container in the fridge. Chop all your vegetables and store them in separate containers. Whisk together your sauce ingredients and keep it in a sealed jar.
  • Storing Cooked Stir Fry: Allow the cooked Tofu Stir Fry to cool completely before transferring it to airtight containers. It will keep beautifully in the refrigerator for 3-4 days. Store it separately from rice or noodles if possible, to maintain better texture.
  • Reheating: For best results, reheat the stir-fry in a skillet over medium heat, stirring occasionally, until warmed through. You can add a splash of water or broth if it seems too dry. Reheating in the microwave is also an option, though the tofu might lose some crispness.
  • Freezing: While the cooked stir-fry can be frozen, the texture of the vegetables may become softer upon thawing. The tofu, however, typically freezes well. If freezing, portion into individual airtight containers. Thaw overnight in the fridge and reheat as above.

The Health Benefits of This Delicious Tofu Stir Fry

This delightful Tofu Stir Fry isn’t just incredibly tasty; it’s also a powerhouse of nutrition! It offers a fantastic way to enjoy a balanced, plant-based meal that nourishes your body. Tofu is an excellent source of plant-based protein, providing all nine essential amino acids. The colorful array of vegetables adds a wealth of vitamins, minerals, and dietary fiber, supporting digestion and overall health. Stir-frying itself is a healthy cooking method, using minimal oil while retaining the nutrients and vibrant crunch of the vegetables.

Frequently Asked Questions

Can I make this Tofu Stir Fry gluten-free?

Absolutely! Simply swap regular soy sauce for tamari, which is a gluten-free alternative with a similar flavor profile. Double-check any other pre-made ingredients like peanut sauce to ensure they are certified gluten-free.

Can I use different types of tofu?

For this Tofu Stir Fry, firm or extra-firm tofu is highly recommended for the best crispy texture. Softer tofus won’t hold up as well. Super-firm tofu also works wonderfully and requires less pressing.

This Tofu Stir Fry will keep well in an airtight container in the refrigerator for 3 to 4 days. It makes for excellent leftovers!

Can I freeze Tofu Stir Fry?

You can freeze cooked Tofu Stir Fry for up to 2-3 months. The tofu itself freezes well, often becoming even chewier. However, some vegetables may lose a bit of their crispness upon thawing and reheating.
